Fresh out of the kiln in Toki, Gifu, a new shipmen

Fresh out of the kiln in Toki, Gifu, a new shipment of Fudoh-gama’s Oribe-ware has just arrived at TOIRO. Each piece is handcrafted at this small family-run pottery in the heart of the historic Mino-yaki pottery region, where Oribe pottery has been made and cherished for centuries.

Mino-yaki does not adhere to a single form, as it has over 15 registered types of traditional handicraft in Japan. The best-known form of Mino-yaki is Oribe Ware, which is most known for its signature deep green glaze.

Fudoh-Gama aims to create pieces that embody both grace and boldness through their color and design.

Specialty tableware designed by Mr. Nobuo Kai, a master of woodcraft based in Yufuin, Oita Prefereture. Made of bamboo and Japanese cherry birch, he starts first with selecting the perfect material and sun-dries the wood. From there, each piece is carefully carved by hand, then the final coating is applied.

Designed for functionality and also beautiful to hold, Mr. Kai’s works are the result of true craftsmanship. Depending on the season and weather, how the wood is dried and the length of the period can vary and requires his daily attention and care.

As a result, production is extremely limited. We admire the dedication to his work and it makes the months of waiting truly worth it.

This Bistro Donabe is our classic-style donabe that is dry-heating capable, which means it can be heated without any liquid inside, which makes it also ideal for sautéing or roasting, too. Also, the flat bottom makes it easier when you align ingredients in layers.

The lid is completely flat and fits tightly to the bowl, and it also has a flat bottom as well. The knob is square-shape, and there are Nagatani-en’s “iga-mono” logos etched on the handles.

If you are new to Donabe, a classic-style donabe is a great place to start. Our classic-style donabes are versatile, all-purpose clay pots and can be used for a variety of dishes from soups to stews and the traditional hot pot.

The Ame-Yu has a warm brown glaze and the Shiro-Yu is a sleek white color. Both are authentic Iga-yaki pottery, handcrafted by Nagatani-en, a maker of Iga-yaki since 1832.

At Nagatani-en, each donabe is made by hand with care and it takes about 2 weeks to produce an individual donabe.

The Shizendou Hida Natural Wood Spatula and Hida Natural Wood Rice Paddle are hand-carved from locally sourced timber to feel natural and balanced in the hand.

Shizendou is the work of Yasuhiro Kaneko, a solo wood artisan who lives close to nature and works independently. Each item is carved by his hand, allowing the natural qualities of the wood to guide the final form.

No two pieces are exactly alike, and each one carries the presence and weight of the tree it came from. Each piece is truly unique in shape, grain, and texture - even within the same type of wood.

Today we found ourselves craving mrsdonabe ‘s Hana Shumai (Steamed Pork and Lotus ‘Flower’ Dumplings). Shumai is a popular dish in Japan, originally adapted from Chinese shao mai, and Hana Shumai is a fun twist on the classic.

This dish was made with our Donabe steamer, Mushi Nabe, but can also be made with a pot with a steam basket.

With cooler days ahead, we’re looking forward to cooking cozy, warm dishes at home, such as this recipe. It can be found in the Simply Donabe cookbook, which is full of Japanese one-pot dishes and inspiration for creating joyful, nourishing meals at home.

In 2008, TOIRO began with a single Kamado-san and a love for donabe cooking. Naoko fell in love with this iconic double-lid donabe rice cooker, made by Nagatani-en, in Iga, Japan, and decided to introduce it to the US.

What started as mrsdonabe selling Kamado-san out of her home has now grown to a brick-and-mortar shop offering a wide variety of donabe, kitchenware, and tableware from all over Japan. Since then, Kamado-san has become a favorite among home cooks and professional chefs for making exceptional rice and a wide range of donabe dishes.

As we look forward, we hope to carry the same passion that brought us from such humble beginnings and continue spreading the spirit of Happy Donabe Life.
