Working with Taski, a modern knife maker rooted in Japanese craftsmanship, this series was designed as a set of versatile knives for everyday cooking. Each blade is crafted from high-quality Japanese stainless steel and finished with a double-beveled edge, making it comfortable for both right- and left-handed users. The knives offer excellent sharpness, clean cutting performance, and easy maintenance, while the wooden handle provides a secure and balanced grip.

After @mrsdonabe discovered their knives and fell in love with them, we realized this special collaboration!

The collection includes three versatile styles designed for a wide range of kitchen tasks.

One of the joys of visiting Gifu is discovering it

One of the joys of visiting Gifu is discovering its food culture.

Because of the region’s pure mountain water, Gifu is home to many historic sake breweries. Some even offer sake tasting from special dispensers where you can try different varieties — such a fun way to explore the character of each brew.

Gifu is also famous for wild medicinal herbs. During her visit, @mrsdonabe joined a workshop to learn about these traditional plants and made her own yakusō shichimi, a fragrant spice blend made with local herbs.

And of course, there are so many delicious things to enjoy — beautiful Hida beef, comforting bowls of mushroom soba like this one, and seasonal sweets such as kuri kinton made from chestnuts.

Each experience offered another glimpse into the deep connection between nature, tradition, and everyday life in Gifu.

One of the most charming experiences in Hida Takay

One of the most charming experiences in Hida Takayama is the morning market, known as asaichi.

Farmers and artisans gather early in the day to sell seasonal vegetables, homemade foods, and handmade crafts. Walking through the market feels like stepping into everyday life in the region.

During her visit, @mrsdonabe was wandering through the market when something immediately caught her eye — a table filled with beautifully hand-carved wooden spoons and tools. The natural colors of the wood, the elegant shapes, and the warmth of the craftsmanship instantly stood out.

The maker was Kaneko-san of Shizendou. Meeting him there and seeing his work in person left a strong impression. Each piece reflects the beauty of the Hida forests and the quiet dedication of a single artisan.

Today, we are lucky to introduce Kaneko-san’s work in the United States for the first time as part of our Gifu Collection 2026. Link in BIO 🔗

New Oribe-Kushime pieces by Fudoh-Gama have joined

New Oribe-Kushime pieces by Fudoh-Gama have joined our GIFU Collection.

Naoko has long appreciated the character of Oribe pottery for its rich color and organic texture. Each piece in the Kushime series feature its signature hand-carved, comb-textured “kushime” lines, individually shaved by hand before firing. This is a perfect example of Mino-yaki pottery traditions designed for everyday use at the table.
