Shirodashi Matcha Soba with Donabe Butter Maitake

Shirodashi Matcha Soba with Donabe Butter Maitake Mushrooms & Grated Daikon. We cook with our ingredients and serve in our tableware available at TOIRO!

We are so excited about our collaboration dinner event with @botanicafood this Sunday! So, @mrsdonabe quickly prepared one of the dishes to be served at the dinner as a test kitchen today, and it was so delicious! She switched hand-pulled somen with our matcha soba this time and it worked great…you can also make it with udon or any noodle of your choice.

The key ingredient for seasoning is definitely Shiro-dashi seasoning, this plant based shiro dashi we have is a real game changer. The mushrooms are sautéed in our cute one-handle donabe, Izakaya Nabe, which we love for quick sautéing ingredients.

This dish is so easy to make and delicious, so hope you will try. Happy Donabe Life!

Here’s the recipe (she made twice the amount in the video)

Ingredients (1 serving):
1 Tbsp unsalted butter
30 g maitake or shimeji mushrooms
a pinch of sea salt
50 g dry matcha soba
1/2 Tbsp sesame oil
1 Tbsp shirodashi
2 Tbsp grated daikon
Daikon sprouts
Ground sansho

Procedure:
Heat the butter in a Izakaya Nabe or other dry-heating capable donabe over medium heat, and add the maitake. Sauté for a few minutes, until maitake is tender and lightly browned. Season lightly with sea salt.

Cook the soba according to the package’s instructions (about 4 min). Drain well and toss with the sesame oil quickly. Add the shirodashi and mix again.

Arrange the soba in a small donburi bowl, and top it with the grated daikon, followed by the sautéed maitake and microgreens. Sprinkle sansho. Serve warm.

When it’s cool and cloudy outside like today, comfort food like Japanese curry is what we crave at TOIRO. It’s so quick and easy to make in the Bistro Mushi Nabe, and the rice (enhanced with the addition of Mochi Mugi Barley) cooks perfectly every time in our double lid #donabe, Kamado-san. This particular curry has a seasonal twist with kabocha squash, and plating it in our Miyama Crimson Bowl made this otherwise casual dish feel so special. What’s your favorite comfort food?
