One of our complimentary gifts with a purchase from our GIFU Collection comes from a very special organic tea farm deep in the mountains of Gifu Prefecture.

Iwadaira Tea Farm has been around for three generations growing and concocting Japanese sencha and herbal blends that are strong in umami and flavor that can only come from tea leaves and herbs grown over long periods of time at a high altitude.

During her visit, Naoko was thoroughly charmed by their hospitality, being treated to many different kinds of their tea and homemade hoshigaki and apple chips.

Based in Nakatsugawa City, Naiki Mokkosho continues the region’s long tradition of woodworking. Their lightweight pawlownia wood jubako features the traditional hatsumi planed texture (also seen in their tea and placemats,) while new cedar and hinoki cypress pieces - including wave placemats and chopsticks with matching rests - bring a warm, natural presence to the table.

As part of our Gifu Collection 2026, we are excited to introduce the works of Yasuhiro Kaneko of Shizendou. Kaneko-san is a solo wood artisan based in Hida Takayama.

Naoko @mrsdonabe fell in love with Kaneko-san’s work and philosophy when she first encountered his pieces in Hida—each one shaped by hand, guided by the natural grain and character of the wood.

Working in his small atelier, he carves each cooking tool by hand from locally sourced wood. His spatulas and rice paddles feel balanced and natural in the hand, designed for everyday use.

As part of our Gifu Collection 2026, we’re sharing a short series introducing the region that inspired this special project.

Located in the heart of Japan’s main island, Gifu is known for its beautiful mountains, clear rivers, and deep craft traditions that have been passed down through generations.

Naoko @mrsdonabe grew up in Tokyo, but Gifu has become a very special place to her. She has visited the region many times over the years, drawn by its artisans, culture, and connection to nature. Before preparing this year’s Gifu Collection, she traveled back again to explore, visit workshops, and spend time with makers.

In Gifu, you can truly immerse yourself in the grand outdoors, timeless traditions, and living culture that continue to shape everyday life.

Over the next few posts, we’ll share glimpses of Gifu through Naoko’s recent visit.

We’re excited to see Naoko and TOIRO featured in a recent New York Times article by @genevieve_ko , highlighting a creamy silken tofu dressing from @rvr.venice , a really popular modern izakaya in Venice, California. Everybody must try their recipe!

In the story, Naoko shares her lifelong connection to Japanese home cooking and her appreciation for Chef Travis Lett’s approach to cooking with locally sourced vegetables — something deeply rooted in traditional Japanese cuisine.
